Okay, so I was running a little behind getting Thanksgiving lunch (which turned into a mid afternoon dinner) ready so I had to put a snack together to keep the troops’ blood sugar in check and to insure that the glasses of wine didn’t get anyone too tipsy before dinner.
I am constantly looking at food magazines and cookbooks and I saw this appetizer in one of them a while ago. I always give credit for a recipe if I post it, but, for the life of me, I cannot remember where I saw this one. This appetizer was so simple and made with ingredients that I love that it stuck in my mind. Apologies to the creator of this recipe. If anyone knows where it was published, let me know and I’ll update this post. I happened to have all the ingredients so I put this together in just a few minutes. I have to say, it was as good as I imagined it would be when I saw a picture of it.
I will definitely keep this appetizer in my repertoire. It is easy, healthy, and delicious. I didn’t try it this time, but Jim suggested that a drizzle of honey might make it even better. I’ll try that next time.
Ingredients
- 1 large log of goat cheese
- 1/2 cup chopped pistachios
- 1/2 cup chopped dried cranberries
Instructions
- 1. Mix and spread chopped pistachios and cranberries on a flat surface.
- 2. Roll goat cheese log in pistachios and cranberries. Press into cheese.
- 3. Serve with crackers.
